What is Raw Honey? Raw honey is natural honey created by bees processing the nectar they collect from flowers with their own enzymes, and it is taken directly from the hive. This type of honey, not subjected to heat treatment above 45 degrees Celsius, preserves its nutritional values, enzymes, and natural pollen content. According to the Turkish Food Codex Honey Communiqué, honeys that have not undergone heat treatment above 45 °C and have been filtered with filters larger than 0.3 mm are defined as “raw honey”.
